How to Cook Semolina’s Premium Pasta at Home

Common mistakes

  • Adding oil to the water
  • Rinsing after draining
  • Not stirring in the first 30 seconds

  • Under-salting the water
  1. Boil water aggressively

    Fill a large pot with water and bring to a rolling boil over high heat.

  2. Salt after boiling

    Once boiling, add a generous amount of salt. The water should taste like the sea.

  3. Stir during the first 30 seconds

    Add the pasta and stir immediately to prevent sticking.

  4. Start checking early

    Cook according to package directions, testing 1-2 minutes before the recommended time.

  5. Reserve pasta water

    Before draining, save a cup of the starchy cooking water.

  6. Drain, don't rinse

    Drain the pasta in a colander, but do not rinse.

  7. Finish in the sauce

    Add pasta to your sauce and toss together over medium heat.

  8. Rest briefly before serving

    Add reserved pasta water as needed to create a silky sauce that coats the pasta.
